Thai Chicken in the Crockpot

Tonight's Dinner....Thai Chicken!


This is SUPER easy, as most crockpot recipes are, and it was also delightful! 

Ingredients:

2-3lbs boneless/skinless chicken breast
1 cup of hot (or medium if serving to kids) salsa
1/4 cup of creamy peanut butter
2 tbsp lime juice
1 tbsp soy sauce
1/2 tsp ground ginger
Instant Brown Rice
2 tbsp fresh chopped cilantro

Combine the salsa, peanut butter, lime juice, soy sauce, and ginger in a bowl.  Place chicken breasts in bottom of crockpot.  Pour mixture over top of the chicken and cook on low for 6-7 hours.  Prepare the brown rice.  Serve the chicken over the rice and sprinkle the cilantro!  This dish is so yummy; we will definitely be fixing it again!

P.S.  I doubt they fix this in Thailand!
