Watermelon and Tomato Salad

My mom made this amazing recipe for our family reunion yesterday.  This was probably my most favorite dish.  The watermelon, onion, tomato, and vinegar just sent my taste buds over the edge!  This is a must make recipe for this summer!  I hope you enjoy it as much as I did.

Tomato-and-Watermelon Salad Recipe

Ingredients:

5 cups of diced and seeded watermelon
1.5 cups ripe cherry tomatoes, sliced in half
3 tablespoon sugar
1/2 teaspoon salt
1 red onion, sliced thin
1/2 cup red wine vinegar
1/4 cup of extra virgin olive oil
Pepper and Salt, to taste
Romaine Lettuce

Directions:

Combine watermelon and tomatoes in a large bowl; sprinkle with sugar and salt, tossing to coat. Let stand 15 minutes.

Stir in onion, vinegar, and oil.

Cover and chill 2 hours. Serve chilled with lettuce leaves, if desired. Sprinkle with cracked black pepper to taste.

Grape Salad


This is the most heavenly grape salad I have eaten! It is more like a desset than a salad!  I took this to our Vacation Bible School potluck picnic last night.  It was obviously a hit since there was none leftover.  I heard a few people asking for the recipe.  This is definately something you want to try!

Grape Salad

Ingredients:

8 oz. sour cream
8 oz. cream cheese
1/2 cup sugar
8 oz. Cool Whip
3 lbs. red or green seedless grapes (it is more attractive if you use a combination of both)

TOPPING:

6 Butterfinger candy bars crushed (use freezer zip lock bag to put candy bars in then roll over them using a rolling pin)
1/2 cup brown sugar
1/2 cup chopped pecans

Directions:

Mix first 3 ingredients. Fold in cool whip and grapes.  Place in a serving bowl.  Mix the topping ingredients and crush.  Then sprinkle on top of salad. Refrigerate for a few hours before serving.  Enjoy!  This recipe is becoming a family favorite!
