Baked Pumpkin Oatmeal

I am very excited to try this recipe!  I hope to make it tomorrow morning.  I have four cups of homemade pumpkin puree thawing out in the refrigerator overnight.  This recipe looks delicious!  

Ingredients:

3 cups quick cooking oats
½ cup brown sugar
1 cup milk
2 tablespoons butter
2 eggs
2 teaspoons baking powder
¾ teaspoon salt
2 teaspoons vanilla
½ teaspoon cinnamon
¾ cup canned pumpkin
¼ cup brown sugar (for the top)

1.  In a large bowl mix together all ingredients except the ¼ cup brown sugar for the top.

2.  Spread into a greased 9×13 pan.

3.  Sprinkle remaining ¼ cup brown sugar on top.

4.  Bake at 350 for 20 minutes.

Serve with milk and enjoy!

Pumpkin Muffins with Cream Cheese Spread

Pumpkin Muffins with Cream Cheese Spread 
 
I found this recipe on My Heart's Desire and they look delicious! I cannot wait to try this recipe!  It is semi-homemade with a box of pumpkin bread mix!


Ingredients:

1 box pumpkin bread mix
1/3 cup canola oil
1 cup milk
2 eggs
*1/2 can pumpkin (regular sized can)

Directions:

Preheat oven to 400 degrees.  Spray a 12-cup muffin tin with Pam. In a medium bowl, mix all ingredients, except pumpkin, with spatula. Fold in pumpkin last. Fill muffin cups with batter.  Bake for 18-20 minutes.

*Save other half can of pumpkin for another batch later in the week!


Fixing the cream cheese spread:

1- 8 oz package cream cheese, softened
1/2 cup brown sugar

Using mixer, combine cream cheese and brown sugar until smooth. Remove from oven and serve warm with cream cheese.

Fall and the yummy pumpkins!

When I think of fall, I think of pumpkins.  We love to go to the pumpkin patch and pick our own pumpkins!  This is such a fun fall activity that we do as a family!  Last year, when we were still living with my grandfather, we had a garden and grew a pumpkin from my son's pumpkin seed.

We cooked down the pumpkin and made pumpkin puree. 



I made some fabulous pumpkin bread last year with this puree.  I am searching for wonderful pumpkin recipes this fall and will be sharing some of the recipes that I find.
