Leftover Vegetable Soup with Christmas Turkey




What do you do with your leftover vegetables?  My husband and I started saving all our leftover vegetables in a container in the freezer.  We have a 1 quart container that we add to anytime we have leftover vegetables and then make a soup out of it, once it is full.  I made a soup this week with leftover frozen vegetables, homemade chicken stock, and leftover Christmas turkey!  The soup was fabulous! 






1 quart frozen leftover vegetables (we had corn, a little canned pumpkin, peas, and green beans)
4 cups Chicken or Turkey Stock
1 can diced tomatoes (there were none in the frozen vegetables)
2 ribs of celery, chopped
1 onion, chopped
1 cup of carrots, chopped
homemade dried basil, to taste
fresh rosemary, to taste
dried sage, to taste
salt, to taste
pepper, to taste
1 TBSP butter
2 cups leftover, cooked turkey or chicken, chopped

Heat butter in the pot.  Add the celery, onion, and carrots and cook until soften and onions are translucent.  Add the meat and  heat through.  Then add the thawed out vegetables and broth.  Add the herbs, salt, and pepper.  Cook on low for 2 hours (or less- just make sure it is heated) before serving.  Enjoy!

I made homemade Sourdough Bread to go with the soup.
