Jalapeno Poppers

Jalapeno Poppers are a summer time favorite at our house.  One of our good family friends gave me this recipe.  She makes it most every time we go up to the lake!  My husband and I planted jalapeno plants in pots on our deck this past spring and we are now harvesting our crops!  I picked almost all our peppers tonight and made a big batch of the poppers.  I'm kind of embarrassed to say that we ate them all!  I hope your family enjoys them as much as ours!

Ingredients for Jalapeno Poppers:
Jalapeno Peppers
Creole Seasoning
Goat Cheese
Cream Cheese
Prosciutto (or Bacon)

Prepare the Peppers-
1.  Wash all the peppers. 
2.  Slice the tops of the peppers off and then slice down one side of the peer to get out the seeds. 
3.  Rinse the inside of the pepper.  Once all the peppers are seeded and rinsed, set them aside. 



Filling-
Now you need to mix up the cheeses.  I do not measure the cheeses, but I do 1/2 goat cheese and 1/2 cream cheese.  If you do not like the flavor of goat cheese, you may want to add more cream cheese to cover the taste!  Sprinkle the Creole Seasoning into the cheese mixture and mix.  Once all the cheese is mixed, stuff the peppers.  Once all the peppers are stuffed, set them aside. 

The Wrap-
On a cutting board, slice the prosciutto into pieces that will wrap around the peppers.  Once they are sliced, wrap each pepper. 



Cooking-
Grill the peppers until done the prosciutto is crispy.  You can use a toothpick to hold the prosciutto in place.  Enjoy!

Tips:  If you don't have a grill, you can cook these in the skillet like I did tonight. 
You can substitute the bacon for prosciutto.  You can find prosciutto in the deli section of your local grocery store.  Also, if you are wearing contacts, you may want to remove them before slicing the peppers.  Sometimes it is hard to get everything off your hand and you don't want to chance burning your eyes!
