Very Easy Pleasing Enchiladas

This is such a quick and pleasing meal for our whole family.  We usually fix this meal when we have a busy evening planned.  It takes very little time to prepare and cook.  My 2 year old even LOVES to eat this meal.


Ingredients:
1 jar of Salsa
1 bag of Tortillas
1 8oz bag of Mexican Cheese
1lb of Meat (chicken, turkey, or beef)

To Prepare:  Cook the meat in a skillet.  Once the meat is done, drain the fat.  Then add to the meat,  half a jar of salsa, and half a bag of Mexican Cheese.  Stir and cook until it is all melted.  Then spoon 1/4 cup (or more, depending on how big you want your enchiladas) onto the tortilla and roll up.  Place all tortillas in a 9x13 baking dish and then pour remaining half jar of salsa and half bag of cheese on top.  Bake the enchiladas at 350 degrees until the cheese melts!  Top with sour cream if desired! 

Ideas for sides with this meal:  Refried Beans, Guacamole, Mexican Rice, or any fruit!  If it is a busy night, we may add applesauce as a side!
