Hashbrown Casserole

Here is a wonderful recipe for Hashbrown Casserole.  My mom has made this for years and I have started making it for my family.  This recipe is great to serve as a side, but you can also serve it as a main dish by adding chopped meat to it!  While I was on maternity leave, I added chopped ham and froze a 9x13 dish.  It came in handy for a quick and easy dinner!



Hashbrown Casserole

2lb bag of frozen hash browns
1 cup diced onions
1 can cream of chicken soup
16 oz sour cream
1 stick of melted butter
8 oz (or more) of shredded cheddar cheese
salt & pepper to taste

Mix all the ingredients in a large bowl.  Then place in a 9x13 dish and bake for 1 hour at 375 degrees, uncovered!  Enjoy!
