The Best Ever Banana Bread

My daughter had an extra credit assignment in math class tonight.  It was to help make some food and use appropriate measurements for each ingredient.  Alex, my daughter, wanted to make something for her class, so we decided on this recipe!  It is so easy and so yummy!


1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1 cup sugar
1/2 cups veg oil
2 eggs
1 tsp vanilla
1 1/2 cups mashed bananas
sprinkles of cinnamon

Preheat the oven to 325 degrees.  Coat a pan with nonstick spray.  Whisk together flour, baking soda, and salt together.  Then blend sugar, oil, eggs, cinnamon and vanilla in a separate bowl until light in color- about 2 minutes.  Then alternately add flour mixture and bananas to the egg mixture starting and ending with the flour. 


Pour batter into a well prepared pan and bake until toothpick inserted comes out clean- about 1 hour and 15 minutes!  Enjoy!
