Candy's Pumpkin Cookies

This recipe was given to me by my coworker.  These cookies are amazing!  I hope you enjoy them as much as we do!



Preheat oven to 375°……Grease cookie sheet or cheat and use parchment paper

Cookies

2 cups of sugar
1 cup of shortening or 2 sticks of margarine
2 eggs
2 cups of pumpkin
2 teaspoons of baking powder
2 teaspoons baking soda
1 teaspoon of salt
2 teaspoons of cinnamon
4 cups of flour (I used White/Wheat flour)
2 teaspoons of vanilla
½ cup of chopped nuts or chocolate chips (optional)

You can also add ground flax seed (healthier) as well.  I used two tablespoons or so….

**To mix, it is easier if you have a Kitchen Aid or some other kind of mixer.  It gets kinda thick if you use a hand mixer but it works.

Cream sugar, shortening or margarine, and eggs.  Add pumpkin and stir/mix.  Blend in baking powder, baking soda, salt and cinnamon and mix well.  Blend flour and vanilla.

Add nuts or chocolate chips if desired.  Drop by teaspoon onto greased baking sheet and bake for 8 minutes.  You should be able to barely press down on the top of the cookies and it will spring back up if not put in for another minute.  When cooled add cream cheese icing.

 Cream Cheese Icing

1 pound of confectionary sugar
1 package of cream cheese (8 oz.) you can use Light or Fat Free
1 stick of margarine
1 teaspoon of vanilla
½ cup of ground nuts (optional)

Mix together and spread on top of cookies!
